Brewer's yeast

By-product of beer brewing. After completion of the mashing process, the so-called sweet wort is separated from the water-insoluble components, the spent grains, in filter presses. Hops are now added to the wort and it is boiled. After cooling, cultured yeasts of the Saccharomyces genus(S. cerevisiae; S. carisbergiensis) are added to the wort. The yeast multiplies very strongly during the onset of alcoholic fermentation. It is separated after the fermentation is completed. This is followed by a drying process (roller dryer; occasionally also spray drying process). The dried brewer's yeast is then available for feeding.

Brewer's yeast is characterised by a high crude protein content ofapprox. 45 %. In addition, its content of B vitamins, minerals and trace elements is remarkable. The protein digestibility is high. The cell walls of special brewer's yeast strains contain high levels of specific oligosaccharides that have a prebiotic effect and are specifically extracted by a few specialised companies worldwide.
