Rye

Rye is a plant belonging to the sweet grasses(Secale cereale), which provides the most important bread grain in Northern and Eastern Europe. Rye has stems about one to one and a half metres long and an ear 15 cm long with awns. A distinction is made between the winter form (winter rye) and the summer form (summer rye). The rye grains are bluish and grey in colour and are used to make flour and groats. Rye is used for the production of grain (rye) spirit. For animal feed, its value is determined by its starch (approx. 55 %) and protein (approx. ten to eleven %) content, which also influences its energy content. By-products from flour production for human nutrition can be used for animal nutrition, e.g. rye bran.
