Potato swell starch
Potato swell starch is a product consisting of potato starch. The starch is largely broken down by heat treatment (hydrothermal treatment). The degree of starch breakdown is at least 50 %. This makes the starch suitably digestible, especially for young monogastric animals. If the heat treatment is followed by a suitable hydrolysis, the product is called partially saccharified potato swell starch. Analytically, the product must then have a content of at least 15 % reducing sugar.
