Whey powder

Whey powder is obtained from whole milk. For this purpose, the cream (butter production) is separated by centrifugation and the skimmed milk remains. By adding rennet (an enzyme) or lactic acid, the casein (milk protein) is precipitated and extracted. In the case of rennet precipitation, the sweet whey remains; in the case of acid precipitation, the sour whey remains. The water is then removed from the sweet whey by a very gentle spray or roller drying process. Sweet whey powder contains about 70 %lactose and about 12 % crude protein. If part of the milk sugar is removed from the sweet whey before drying, the result is partially desugared whey powder with approx. 36 % lactose and approx. 22 % crude protein. Whey products have a very high digestibility and are mainly used in the nutrition of young monogastrics (e.g. piglets) and calves.
