Wheat gluten
Wheat gluten is a by-product of starch extractionfrom wheat grains. Wheat is degerminated in wet milling after a swelling process. After the husk is removed from the endosperm, the wheat is mechanically cleaned. In the process, the wheat gluten (gluten protein) is separated and the pure wheat starch is obtained. Wheat gluten is characterised by a very high crude protein content(approx. 73 %) with very high digestibility. Therefore, wheat gluten is mainly used in special products for monogastric animals(pigs, poultry).
