Strength
From a purely chemical point of view, starch is a polysaccharide and is the most important plant reserve substance. Starch is the main source of energy in the feed of monogastric animals. Starch can be divided into two fractions: the straight-chain amylose (20-50%, depending on the feed) and the branched-chain amylopectin (50-80%, depending on the feed). Both fractions consist of glucose building blocks in an alpha-glucosidic bond. Cereals (e.g. wheat, maize) are particularly rich in starch. The by-products from grain processing such as wheat bran contain little starch.
